betty brunch: homemade crumpets and jazz trumpets

Crumpets are one of the most underrated breakfast foods of all time. They’re often passed over for the pancake or thrown to the side in favour of an English muffin. But listen, they’re delicious. They’re soft and squishy and decadent and they go with pretty much every breakfast topping imaginable. Butter and jam? Sure thing. Eggs and bacon? Easy. Fruit and nuts? Oh, well we’re so glad you asked.

Claudia Brick’s recipe, (which she adapted from the brilliant Izy Hossack) combines the delicious simplicity of a crumpet with some pretty badass toppings: passionfruit curd, hazelnut crumble and strawberries. And you can eat it for breakfast. The dream. Find the full recipe on Brick Kitchen.
